Baked eggs your way

Homemade baked eggs with a little bit of avo and crusty bread on the side.

This baked eggs recipe is protein full, flavour packed and satiating for all. I served the eggs with my homemade bread (recipe on the blog xx) and some avo.

INGREDIENTS

  • 2 eggs

  • Salt

  • Pepper

  • Garlic

  • Oregano

  • Pasata 2-3 tbsp

  • Parmesan cheese (handful)

  • Chives (handful sliced thin)

  • 1 small can organic black beans

  • 1/4 capsicum

  • Siracha to taste

  • 1/4 avocado (to serve)

  • Homemade crispy bread (recipe on blog)

method

  1. Preheat oven to 180 degrees

  2. Spray or line oven safe bake pot or tin

  3. Combine beans, garlic, oregano, capsicum and little sant and pepper in a bowl

  4. Spoon into tin or bake pot

  5. Place bean in oven for 8 minutes

  6. Crack 2 eggs on top of beans

  7. Place in oven for 5-7 minutes depending on how you like your eggs

  8. sprinkle pepper, siracha and chives on top

  9. Serve with avo, crispy bread and some salt on top

  10. Enjoy xx
