chop chop salad

it’s pretty simple actually, all you have to do is chop!

This salad is packed with colour, fibre, crunch and flavour. It makes the perfect addition to any piece of protein and is great for all year round. Let’s chop.

INGREDIENTS

  • 1 bag rocket

  • Salt

  • Pepper

  • 1/2 capsicum diced

  • 1/4 cabbage sliced thin

  • 1 to 2 roma tomatoes diced

  • 1 carrot diced

  • 2 to 3 balls of bocconcini diced

  • 1/4 lemon juiced

method

  1. Dice tomato, carrot, cucumber, capsicum and bocconcini small

  2. Slice cabbage thin and squeeze lemon juice

  3. Place rocket into a bowl as your base

  4. Add in all chopped vegetable and toss salad to combine

  5. Squeeze lemon juice over the top and serve with your favourite choice of protein.
