Welcome to episode 1 of scrappy cooking with me, Zoe xx. If you hate wasting food but never know what to do with random leftovers well, this bowls for you. Protein packed, fibre filled, every colour of the rainbow and totally satisfying. Throw it all together and you are good to go xx..

INGREDIENTS (leftovers)

  • 1/4 cup cooked white quinoa

  • 1/4 cup sliced capsicum

  • 1/4 cup black bean and corn mix

  • 2 handfuls of any leafy greens (mine was a leftover salad mix)

  • 1/2 cup cooked chicken (mine was from chicken skewers the night before

  • 1/4 avo before it goes brown

  • 1/4 lemon juice

  • 1 garlic clove

  • 1/2 tsp ginger

  • pepper

  • salt

  • oregano

  • 1 tsp honey

method

Putting the bowl together:

  1. Well it’s pretty simple, chuck it all in a bowl

  2. Combine juice, salt, pepper, oregano, honey, garlic and ginger

  3. Drizzle on top’

  4. Enjoy the zero waste meal
