Easy vegemite scrolls

a little dose of my childhood

I have always loved Vegemite scrolls. I used to have them everyday as a kid after school, or if I was lucky enough the tuck shop would have some. Let’s bring back those good days and create a much easier and healthier version.

Ingredients

Serves: 4 (2 bites each)

  • 1 cup greek yogurt

  • 1 & 1/2 cups self raising gluten free flour (plus pre for dusting)

  • 2 tbsp Vegemite

  • 1/2 cup shredded cheese or cream cheese works too

Method

  1. Place 1 cup greek yogurt in a mixing bowl

  2. Add bit by bit of the flour to the bowl making sure to combine and fold the mixture

  3. Once combined, use hands to knead the dough

  4. Roll into logs and then use a rolling pin to flatten to about 1cm thick

  5. Spread Vegemite and then add sprinkle of cheese ontop

  6. Roll the log up and squish down to top slightly to make more round and flatter

  7. Bake scrolls in oven or air fryer

  8. If you are using air fryer (180 degrees for 15 mins to be nice and crispy)

  9. If you are using the oven, (180 degrees for 15-20 mins depending on the type of oven)

  10. Serve warm and enjoy a little slice of your childhood xx
