Ricotta and pesto twists

The perfect addition to your sunday afternoon platter

I am now obsessed with these pets and ricotta twists. They are gluten free, yogurt based with ads protein and just so delicious. Follow along below if you want to find out how to make these bites of heaven.

Ingredients

Serves: 4 (2 bites each)

  • 1 cup greek yogurt

  • 1/2 cup -3/4 gluten free self raising flour (depends on if you want them to be more wet or dry)

  • everything but the bagel seasoning

  • Salt and pepper

  • Olive oil 1-2 tbsp

  • 2-3 tbsp pesto (use it as you like)

  • 1/4 cup ricotta cheese

Method

  1. Combine yogurt and flour in a bowl mix with either a spoon or hands

  2. Add in salt and pepper and begin to kneed the mixture until it is like a dough

  3. Roll into balls (gold ball size)

  4. Press down until flat ( I made 8)

  5. Spread pesto on first them ricotta second

  6. Roll from the centre of one side of the circle to the other. You can also twist further as well

  7. Drizzle oil on and extra salt onto the top

  8. Place in air fryer or oven for at least 12 minutes or until crispy and golden.

  9. Serve with a sauce or even some prosciutto on the side.
