Summer Rice paper bites

Rice paper rolls made more fun

I am a sucker for summer rice paper rolls but I always feel like they break or are just hard to eat. So, with that said… let’s take those rice paper rolls and cut them into little bites. That way they last longer are easier to eat and are a bit of fun for the kids too.

INGREDIENTS

Serves: 4 (2 bites each)

  • 8 sheets of rice paper

  • Shredded carrot

  • Shredded cucumber

  • Lettuce

  • Mint leaves

  • 2 x serves of rice noodles soaked & drained

  • Protein of your choice ( I chose beef)

  • Hoisin dipping sauce

METHOD

  1. Fill a shallow bowl with hot water and begin to soak the first rice paper sheet

  2. Once soaked, layer veggies in spall even portaions

  3. Layer on the noodles (Make sure they are drained and not too wet)

  4. Add in avo and protein of choice

  5. Top with mint leaves

  6. Roll 2 sides into the centre so they cross over

  7. Then, roll 1 other side into the centre all the way until the roll closes

  8. Let the roll sit while you repeat the process for the other 7 rolls

  9. Then cut rolls into small sushi like pieces (should have 2 rolls each)

  10. Dip into sauce of choice or hoisin and enjoy
