Apple & Blueberry oat bites

The perfect brekky to go… or, a healthy & satisfying desert.

I love oats but don’t always have time to cook a new batch each morning. This one bowl oat bite recipe is my new go to for both brekky options and also a healthy desert pair with some dark choc… Yum!

INGREDIENTS

Serves: 8

  • 1 cup oats

  • 3 scoops protein powder

  • 2 x apples (diced)

  • squeeze of lemon

  • teaspoon cinnamon

  • 2 eggs

  • 30g butter melter or 1/4 cup coconut oil melted

  • 1/4 cup walnuts

  • 1/4 cup agave or honey

  • 1 cup blue berries

  • Pinch salt

METHOD

  1. Preheat oven at 180 fan forced

  2. Fry off apple and blueberries in pan with cinnamon and lemon

  3. In a bowl combine all dry ingredients

  4. Add wet ingredients and fruit from pan

  5. Combine with a wooden spoon with a folding method

  6. Line muffin tray and fill with batter

  7. Bake for 20 degrees at 180 fan forced

  8. Serve with greek yogurt pf dark choc on side
