Sweet potato bagels for all

Did someone say sweet potato bagels…. um yes please! Let’s bake.

INGREDIENTS

Serves: 6

  • 2 cups gluten free flour

  • 2 eggs

  • 1 tsp baking soda

  • 1 sweet potato baked and mashed

METHOD

  1. Bake sweet potato in oven for an hour or microwave for 10 minutes

  2. Mash sweet potato until smooth (optional to add salt and a little butter)

  3. In a bowl combine all dry ingredients with the sweet potato

  4. Add in egg and combine

  5. Roll into one big piece of dough

  6. Cut into 6 pieces

  7. Poke hole in center and make sure is even as dough expands

  8. Boil in pot of water for 5 minutes

  9. Cut in half and toast bagel

  10. Top with your favourite fillings and spreads and enjoy this versatile little slice of heaven
