Sweet potato bagels for all
Did someone say sweet potato bagels…. um yes please! Let’s bake.
INGREDIENTS
Serves: 6
2 cups gluten free flour
2 eggs
1 tsp baking soda
1 sweet potato baked and mashed
METHOD
Bake sweet potato in oven for an hour or microwave for 10 minutes
Mash sweet potato until smooth (optional to add salt and a little butter)
In a bowl combine all dry ingredients with the sweet potato
Add in egg and combine
Roll into one big piece of dough
Cut into 6 pieces
Poke hole in center and make sure is even as dough expands
Boil in pot of water for 5 minutes
Cut in half and toast bagel
Top with your favourite fillings and spreads and enjoy this versatile little slice of heaven
