Zucchini fritters done right

These fritters are a hunger crushing combo. They are perfect for breakfast, lunch and dinner. Combined with a zesty tzatziki and side salad it’s the perfect light yet satisfying meal for the summer time.

why are they so good for you?
ZUCCHINI: a very simple and humble ingredient. However, this ingredient is not only simple and affordable, it also is very versatile. To be specific, it’s a versatile squash rich in vitamins, minerals and plant compounds. Along with packing a punch of seven important nutrients, it also is a low calorie, high volume, low sugar and carb vegetable which is so easy to sneak into meals for those picky eaters.
INGREDIENTS
3 zucchinis
2 carrots
3 eggs
½ cup shredded cheese
2 tbsp olive oil
1 can corn
1 ½ cups flour
Salt and pepper
½-1 teaspoon oregano
1 Squeeze lemon juice
½ Cucumber
1 cup Greek yogurt
1 clove garlic minced
Handful roughly chopped mint
method
Fritter batter:
1. Grate all 3 zucchinis and 2 carrots finely
2. Pat dry zucchini and carrots with paper towel until moisture is gone
3. Crack 3 eggs and whisk until slightly fluffy
4. Add all spices to egg mixture
5. Add zucchinis, carrots, corn and cheese to the wet ingredients
6. Add flour to the bowl
7. Combine all ingredients using hands until mixture looks thick like cake batter
8. Let cool in fridge for 10 minutes
Making the Tzatziki:
1. Finley chop cucumber
2. Mince garlic clove
3. Squeeze 1-2 tablespoon lemon juice
4. Roughly chop mint
5. Combine all ingredients into bowl
6. Add drizzle of olive oil to top with salt
Optional:
side salad (rocket, pear & parmesan)
