Chewy cookie dough bites

CHEWY, GOOEY & SIMPLY DELICIOUS

Chewy, sweet, a little salty, and not at all bad cookie dough bites. These Bites are the one thing I reach for when I just want a little xtra after dinner. Oh, they have protein in them too xx.

INGREDIENTS

  • 100 g almond flour/meal

  • 60-70 G protein powder

  • Pinches of salt

  • 4 tbsp lite maple syrup

  • Dash vanilla extract

  • Dash cinnamon

  • 20-30 ml almond or plant based milk

  • Vegan choc chips (to taste), leave some for the coating

  • Cocoa bikinis or seeds for extra magnesium and fibre

  • 2-3 heaped tbsp melted coconut oil

method

  1. Combine almond flour and protein powder in a bowl

  2. Melt coconut oil, then combine with maple, salt, cinnamon, vanilla extract into the dry mix

  3. Mix well with a spoon

  4. Add in buckinis and choc chips into bowl as well

  5. Spoon into clumps onto a lined plate or tray (makes around 8)

  6. Freeze until outside is hard enough to pick up from plate (I only did 20 mins)

  7. Melt remaining choc chips with 1 tbsp coconut oil

  8. Coat bites in chocolate mix and then place on plate and freeze for 5 minutes

  9. Sprinkle salt and enjoy the chewy cookie insides.
