Tuna rice balls

This was my Nan’s special recipe

This tuna rice balls recipe is easy, minimal ingredients, fun to make and satisfying too. For all my Gluten free babes out there, it’s GF too xx.

INGREDIENTS

  • 1 cup rice

  • 2 cups water

  • 4-6 chopped shallots

  • 1/2 chopped capsicum

  • 1 chicken stock cube

  • 1/2 cup mayo

  • 1 large tine spring water tuna

  • salt and pepper

  • 1 cup grated cheese

  • dash lemon juice

  • 3 beaten eggs

  • 3/4 cup gf flour

  • gf breadcrumbs

  • Olive oil to fry in

method

  1. Cook rice per packet, with 4-6 shallots, 1/2 capsicum, salt, pepper and 1 chicken stock cube.

  2. When cooled, add half cup of mayo, tin of tuna and cup of cheese and lemon juice. Mix well with spoon or hands.

  3. Roll into balls of whatever size you’d like.

  4. Coat in flour, egg and breadcrumbs and repeat for all balls.

  5. Shallow fry in olive oil for 2 mins each side.

  6. Serve with lemon and source of your choice.
