Single serve protein muffin

Sometimes you just want one, not the whole batch

I love a good muffin, especially when it packs a good amount of protein. But I don’t always want to make huge batch that will mostly likely end up in the freezer being forgotten or just not eaten in time. This single serve protein muffin is a great way to minimise waste and also can be done in a short amount of time.

INGREDIENTS

  • 1/4 cup gluten free self raising flour

  • 1 scoop protein powder

  • 1 egg

  • 1 tbsp olive oil

  • pink salt

  • handful chopped dark chocolate

  • handful pumpkin seeds

  • 1/2 banana

  • sweetener (optional)

method

Muffin mixture:

  1. Preheat oven to 180 degrees

  2. Combine olive oil, egg, almond milk and whisk

  3. Combine in separate bowl dry mix: seeds, flour, salt, protein powder and dark chocolate

  4. Add wet mix to dry mix and combine with spatula

  5. Fold in mashed banana and dark chocolate

  6. Spray single serve dish and pour in muffin mixture

  7. Bake for 20-30 minutes depending on oven

  8. Serve with berries, yogurt and enjoy xx
