Winter warming bowl

Greens, greens, greens

This bowl is based on a warm kale base infused with garlic, vegetable stock, lemon and olive oil. From there, it’s really up to you. I have added leak, stock infused rice and broccolini as well as avocado, tomato, chickpeas and grated parmesan. However, the beauty of this bowl is that you can add any carbs, fats and protein you like.

Serves:
1 (volume eating)

INGREDIENTS

  • 5 stalks kale roughly chopped

  • 3 stalks broccolini roughly chopped

  • 1/2 leek sliced

  • 1/4 cup basmati rice

  • 1 cup stock (any kind is fine)

  • slice of lemon and juiced

  • 1 tsp minced garlic

  • 1 tbsp olive oil

  • 1/4 roma tomato

  • 1/4 avocado

  • salt and pepper to taste

  • fresh grated parmesan cheese

  • chickpeas (take shell off)

method

Putting the bowl together:

  1. Chop kale roughly so the stalks are still attached to the leaves

  2. Wash kale under running water and pat dry with paper towel

  3. Slice half leek stalk thinly and set aside

  4. Chop broccolini roughly so stalks are still attached, place with leeks

  5. Heat pan to medium heat

  6. Add olive oil, garlic and lemon juice to pan and let simmer

  7. Add in broccolini and leeks and begin to sauté 3 minutes

  8. Add kale and smash of stock (to your liking) to the pan

  9. Let mixture sauté for 5-10 minutes depending on how crunchy you like your veggies

  10. Cook basmati rice per packet instructions (used 1/4 cup) and infused with 1/2-3/4 cup stock

  11. Once everything is cooked, it’s time to plate. Add kale mixture and rice to plate

  12. Add tomato, avocado, lemon juice if any leftover and chickpeas to plate

  13. Grate fresh parmesan (be generous)

  14. Salt and pepper to your liking and serve xx
